Hey everyone - it's Layla!

I hope you're all well and I hope that each and every one of you lovely readers had a wonderful Christmas break, spending the time with your family and friends - it's the most wonderful time of the year after all.

Just because Christmas is now over, it doesn't mean that we can't still enjoy festive food and drink - nope! In this post, I'm sharing one of my most-loved Mulled Wine recipes and yes, there's a slight twist to it too.

🙂

What I love about making Mulled Wine at home (apart from my home smelling lovely) is that ingredients can be changed to suit your taste - sometimes you might want your mulled wine sweeter, other times less so, you might want to add more cinnamon or even less - it can all be tweaked to suit you and your taste in the moment you're making it and that's what I love about making food and drinks at home.

Method

Start the whole process by adding the sugar into a large saucepan, along with the zest of 1 clementine.

Squeeze the juice of the 3 clementines into the sugar - along with the juice from half a lemon.

Next, halve the Vanilla Pod and add that to the saucepan - mixing the ingredients together.

As soon as you see that the sugar starts to caramelise slightly, add the bottle of wine to the pan and turn down the heat.

Now, add the dry ingredients - the cloves, the star anise, the cinnamon sticks and grate some fresh nutmeg into the drink too.

Stir the ingredients and let the mulled wine simmer for a few minutes.

The sugar should have dissolved by now - this is when you turn the heat up to bring the mixture to a boil.

By allowing the mixture to boil you're allowing the ingredients to intensify in flavour - especially the cinnamon, cloves and star anise.

As soon as you notice the mixture start to thicken slightly , you can turn down the heat and serve.

Optional - Add a touch of edible glitter to your drink for festive cheer! This is perfect for New Year's!
