Who doesn’t love cookies? I think most of us will say that we love cookies and here, you have the EASIEST vegan cookie recipe imaginable!
What I love about these types of recipes is the fact that you can use this as a base recipe and add any other additional ingredients.
As you’ll be able to see, I’ve made two batches – one bowl has vegan chocolate and the other bowl has finely chopped walnuts.
You can experiment with things like dried fruit, nuts, cinnamon, nutmeg etc – the best part is that you can get creative and use the things you love!
What You Need: Easy Vegan Cookie Recipe
(Makes approx 40-50 cookies depending on the size)
- 1 Cup Oil
- 1 Cup Sugar
- 1 Cup Orange Juice
- 1 Tsp Baking Soda
- 1 Tsp Baking Powder
- Zest of Orange (Optional)
- Chopped Vegan Chocolate (Optional)
- Finely Chopped Walnuts (Optional)
- Flour – as much as the mixture needs to become cookie dough.
In a bowl add your oil and sugar, mixing slightly before adding the orange juice with the baking soda.
Please Note – Hold the cup of orange juice over the bowl. As soon as you add the baking soda, it reacts with the orange juice – as you can see in the video.
Mix ingredients and add the baking powder, vanilla and zest of orange.
Add your flour until the mixture becomes a cookie-dough like texture.
I split the mixture in between two bowls, adding vegan chocolate in one bowl and finely chopped walnuts in the other.
This is where you can get creative and add your favourite dried fruits, nuts or spices.
Shape or cut your cookies into the desired design and place on a baking tray.
Bake for around 40 minutes, 180 in a fan oven.
