Recipe: Easy Vegan Pancakes

Pancakes! Who doesn’t love pancakes? In this post, I’m sharing this easy vegan pancakes recipe so you can make scrumptious treats time and time again!

This recipe is such a great option as you can use this as a ‘base recipe’. What I mean by that is you can use the base ingredients for the vegan pancakes and then customise to your taste.

For example, in this recipe, I’ve kept things simple – adding a little bit of cinnamon to the mix and then topping with maple syrup and icing sugar.

However, if you’re looking for a healthy pancake breakfast idea, you can use the base recipe and add fresh fruit over the stack of vegan pancakes. Topped with maple syrup, coconut cream or homemade vegan caramel sauce (recipe coming soon).

If you’re relaxing at home on a Sunday evening and want a sweet, yet healthy, treat – you can add vegan chocolate chips to the base recipe or even add caramelised fruit over the stack.

That’s the best part of a recipe like this, you can customise things by adding different spices, chocolate or fruit to make something you fancy at that moment.

Easy Vegan Pancakes – Recipe

When it comes to these vegan pancakes, I don’t really measure the ingredients.

I just check the consistency of the vegan pancakes mix as I go along – adding extra flour or plant milk when and if needed.

Below, the amount is what I used for the pancakes which you can see in the photos and video recipe – it makes around 20 mini pancakes.

2 Bananas

Plant Milk – Approx 1/4 cup, give or take.
(I use vanilla plant milk for extra sweetness & taste but you can use any plant milk)

Flour – Approx 2 Tablespoons, give or take.

Cinnamon (Optional)

Easy Vegan Pancakes – Method

In a bowl, mash the banana.

Add the plant-milk to the bowl and mix together – creating a liquid(ish) mix.

Add around 2 tablespoons of flour and mix together. Check the consistency and add more flour or plant-milk if needed.

Optional – here, you can add a sprinkling of cinnamon or your favourite spice. For a winter treat, you can use something like nutmeg.

Mix the ingredients together and once you’re happy with the consistency, add to a hot pan.

Stack the pancakes and serve warm – pour maple syrup, icing sugar, chocolate chips or homemade caramel sauce over the stack and enjoy!
